Spring is here, but there’s no time to stop and smell the flowers. Hiking, gardening, festivals – there’s so much to do. And let’s not forget about crafting!

So how do you get through that to-do list without crashing and burning? Easy – make these 2 easy energy bar recipes. There are only a few ingredients in each one and they only take a few minutes to whip up.

Vegan Choco-Coconut Energy Balls
These vegan energy balls are amazingly dee-lish. And they’re perfect for those all-night craft-a-thons. You know, the ones when you get start a project at 10pm and before you know it – it’s 2am! Next time that happens, put away the cookies and grab one of these energy balls. They’ll help you get your chocolate-fix, and they’ll keep ya crafting the whole night!

Ingredients

    • 1/2 cup pitted dates
    • 1/4 cup almond butter
    • 2 teaspoons cocoa powder
    • 1/2 cup unsweetened shredded coconut

Directions

  1. Combine dates, almond butter and cocoa powder in a  food processor until a smooth ball forms.
  2. Mix in coconut.
  3. Form into 10-12 small balls.

Crunchy Scott Energy Bites
I’m not exactly sure if these are vegan. One of the ingredients is Wheaties and if you look on the cereal box – there doesn’t appear to be any animal products listed. But I can never be sure if the sugar or some vitamins were processed or sourced from animal ingredients. You can easily replace the Wheaties with nuts or dried fruit. But I really love the CRUNCH from the Wheaties! (And yeah, I named a recipe after myself.)

Ingredients

    • 1/2 cup pitted dates
    • 1/2 cup peanut butter
    • 1/2 cup crushed Wheaties

Directions

  1. Combine dates and peanut butter in a food processor until smooth ball forms.
  2. Mix in crushed Wheaties.
  3. Form into 10-12 small balls or roll out onto a sheet of wax paper and cut out shapes with small cookie cutters.

Note: I keep both in the fridge so they stay super-fresh.
